Jo's beef pasty

  • shortcrust pastry
  • 2 red onions, diced
  • 3 carrots, chopped small
  • 1 small sweet potato, diced
  • 500g minced beef
  • 1 beef stock cube
  • olive oil
  • milk

    Originally featured on Alive With Flavour, this is a great way to use up leftover pastry and some vegetable odds and ends.

    Heat a little oil in a frying pan over a low heat.

    Add the onions and soften them gently, then add in the other vegetables and beef. Crumble in a beef stock cube, a splash of water if necessary and cook slowly over a low heat until beef is brown and vegetables are tender.

    Roll out your pastry and then cut into circles. Place some of the filling into the centre of the pastry, draining off any excess liquid.

    Pull up the sides of the pastry, pinching the edges together as you go, until it resembles a Cornish pasty.

    Brush with milk and pop in an oven preheated to 180°C for 30 minutes or until golden brown.

    Simple and delicious!
