Stacy's peanut butter stir fry

A quick, easy and satisfying recipe suitable for those with a Deadly Nightshade intolerance


  • 2 tablespoons peanut butter
  • 3 tablespoons vegetable oil
  • 2 large chicken breast fillets
  • handful of sugar snap peas
  • 1 carrot
  • handful of baby corn
  • handful of green beans
  • sweet potato

    Stacy Cosham was diagnosed with an intolerance to Deadly Nightshades and found very little information to help her with her diet so started her own collection of recipes at A Girl From Devon.

    This is a quick and simple recipe suitable for most diets, and easily adaptable by using any veg that you happen have to hand.

  2. prep the chicken

    Cut the chicken fillets into bitesized pieces and brown in a moderately hot pan with 1 tablespoon of the oil.

  3. prep the vegetables

    Chop your vegetables into bitesized piece and grate or ribbon hardier vegetables like sweet potato.

  4. cook

    Add another tablespoon of oil to the hot pan and throw in the vegetables to cook alongside the chicken.

    Cook for approximately 5 minutes or until softened.

  5. make the peanut butter sauce

    Make a well in the chicken and vegetable mix and add the last tablespoon of oil and all of the peanut butter. Stir until melted and fold in the chicken and vegetables until coated.

  6. Serving suggestion

    Plain rice
