We have to admit we were pretty sceptical when Keith Davidson of Perfect World Ice Cream, sat down in the studio with a tub of his carrot cake ice cream. After all, it was gluten free, sugar free and dairy free (yes, DAIRY free). Surely it's not ice cream at all then. It’s gorgeous - looks, smells, feels and tastes like the perfect ice cream and it’s healthy. But how do you make it?
