Diana Novoa Wallace and Paul Wallace have been inspired by monks in Japan who made their tea by steaming, drying and grinding tea leaves that would then be diffused in water instead of brewed. They set up Teaforia to deliver ground tea to the UK market and Sue Nelson loves them. She has a particular soft spot for the Ginger Ninja rooibos tea and also the Citrus Zen matcha tea.
